Mushroom and Spinach Stir-Fry

1 pkg. UNCLE BEN'S® READY RICE® Whole Grain Brown |
3/4 lb. boneless skinless chicken breast cut into bite-size pieces |
2 Tbsp. oil |
2 Tbsp. light soy sauce |
4 oz. sliced fresh mushrooms |
1 box (10 oz.) frozen chopped spinach, thawed and drained |
Directions:
1. Heat rice in microwave for 90 sec.
2. In a skillet, heat oil over medium high. Sauté chicken for 5 min. or until completely cooked.
3. Add mushrooms and spinach to the skillet, cook 2 min. Stir in soy sauce and serve over rice.
