Caribbean Chicken

1 (3 lb.) whole chicken, cut into 8 pieces |
2 Tbsp. adobo seasoning |
1 c. zesty Italian dressing, divided |
6 cloves garlic, minced |
1 medium onion, sliced |
1 c. white vinegar or lime juice |
1 c. stuffed green olives, chopped |
1/4 c. capers |
1 bay leaf |
4 c. hot cooked MinuteĀ® White Rice |
Directions:
1. Rub chicken with adobo seasoning; set aside. Heat 1/4 c. of the dressing in large skillet on medium-high heat. Add chicken; cook 7 to 10 min. or until lightly browned, turning occasionally. Remove chicken from skillet; cover to keep warm. Drain and wipe out skillet with paper towels.
2. Add remaining 1/4 c. dressing and all remaining ingredients except chicken and rice to skillet; cook and stir 3 min. Reduce heat to medium-low. Return chicken to skillet; simmer, covered, 45 min. or until chicken is cooked through.
3. Spoon over rice to serve.
How to Make Your Own Adobo Seasoning: Mix 1 Tbsp. each garlic powder, onion powder, dried oregano leaves and pepper, and 1/2 tsp. salt. Store in airtight container at room temperature.
